Hilton India, in partnership with jackfruit-based meat company Wakao Foods, is organising a four-month long food festival showcasing the versatility of sustainable plant-based alternatives to traditional meat.
‘The Wakao Fest’ aims to cater to the rising consumer appetite for plant-based meat with a focus on offering an amazing dining experience through a well-curated menu revolving around jackfruit as the main ingredient.
Customers can get a taste of this unconventional menu between August and November in Hilton properties located across India, including, Mumbai, Pune, Delhi-NCR, Ahmedabad, Goa, Agra, Chennai, Jaipur, Thiruvananthapuram, Bengaluru and Lucknow.
“Wakao is an expression that perfectly captures the flavourful twist of our dishes as well as the guests’ reaction when they dine at any of our Hilton outlets,” said Prashant Kulkarni, Director F&B India, Hilton.
He added, “The shift towards plant-based alternatives is the most dominant trend of 2021 triggered by the growing consciousness about mindful and healthy eating. The Wakao Fest explores unique dishes that are sustainable to serve and bring guest delight.”
The collaboration aims to support local producers and products, as well as make plant-based alternatives mainstream. It also puts focus on jackfruit as a sustainably sourced option that does not require chemical pesticides, herbicides and can be intergrown with other crops.
“As the world looks at more plant-based alternatives, which are healthier and more sustainable options, there is a growing interest in meatless meals off late. The versatile and indigenously grown jackfruit is bursting onto the scene and finding itself being used more often. The pop-up therefore explores the versatility of the humble jackfruit, which is considered a superfood but needs to be more relevant across the cuisine culture of the country,” said Sairaj Dhond, Founder & CEO, Wakao Foods.
The menu at The Wakao Fest will offer several cuisines and gourmet delights comprising main course, starters and desserts, all made using jackfruit. Guests will be invited to sample dishes like The Wakao Krapow, Parmesan Polenta, Faux Pao etc.
