Ingredients:
1 cup tofu
1 large onion, finely chopped
1 large tomato, finely chopped
1 capsicum, chopped in small pieces
1 carrot, diced into small pieces
1 tsp curry leaves
1 chilli, finely chopped
0.5 tsp jeera/cumin seeds
0.5 tsp kashmiri chilli powder
1 tsp coriander powder
0.5 tsp turmeric powder
0.5 tsp garam masala powder
2 tbsp oil
coriander leaves or sesame seeds for garnish
salt as per taste
Steps
Saute capsicum separately and keep aside
Blanch carrots and keep aside
Now heat oil in a pan or kadai
When oil heats up, add tofu and fry till golden brown. Keep aside.
In the same oil, add cumin seeds and let them splutter. Now add onions, green chillies, turmeric and curry leaves. Sauté well till onions become slightly brown
Now add tomatoes and salt, and keep cooking till tomatoes become soft and start leaving oil from sides
Add remaining spices and sauté well
Now add capsicum, carrots and tofu. Saute at high flame for 2 minutes.
Cover with a lid and let it simmer for 2 more minutes.
Add chopped coriander and mix well
Serve hot with chapati
