Ingredients:
- 2 cups poha or flattened rice
- 1 large onion, finely chopped
- 1 medium boiled potato, cut into small cubes
- 10-15 curry leaves
- 2 green chillies, finely chopped
- 3 tsp roasted peanuts
- 1 tsp black mustard seeds
- Juice of one big lemon, around 2-3 tsp
- 1.5 tsp sugar
- 3 tbsp oil
- 1.5 tsp turmeric
- Coriander for garnish
- Salt as per taste
- You can also add 2 tbsp of fresh grated coconut if it is available. I am skipping it in this recipe
Steps
- Wash poha 3-4 times and leave it for 5 minutes
- Then, mix sugar and salt in the soaked poha
- Take a large pan or a kadai and add oil to it
- As the oil heats up, add mustard seeds
- Once the seeds start spluttering, add onions and chillies
- Once onions start browning, add curry leaves, turmeric and peanuts
- Add potatoes. You may skip them if you don’t like the taste of boiled potatoes. You may also fry them a little beforehand and then add to make them crunchy
- Now add poha, coriander and lemon juice
- Mix well
- Top it up with some sev or bhujia
- Serve it hot
