Ingredients:
1 cup rava/suji/semolina
1 small onion, finely chopped
10-15 curry leaves
1 carrot, finely chopped
1 green chilli, finely chopped
1 tsp black mustard seeds
1.5 tsp sugar
0.5 tsp chana dal
0.5 tsp white urad dal
2 tsp cashews, roasted and split
2 tbsp oil
3 cups of water
1 tsp lemon juice
1 tbsp coriander, finely chopped
Salt as per taste
Steps:
Dry roast suji till raw aroma goes away and then let it cool down. Do not brown it.
Take a large pan and heat oil. As oil heats up, add mustard seeds, chana dal and urad dal. Saute a little.
Then add onions, chillies, and few curry leaves
When onions turn slightly brown, add carrots and saute a little
Add cashews and saute everything well
Add water and let it boil
Now add sugar and salt. Mix it well
Add suji in batches, while stirring continuously. Do not stop stirring, else lumps may be formed.
Keep stirring till suji absorbs all the water.
Now, reduce the flame and let it simmer for a couple of minutes
Add lemon juice and coriander leaves. Mix everything well.
Serve hot with your favourite chutney or sauce
